Efforts by a Dominican University nutrition student and professor to address healthy eating and the food desert problem in Chicago’s Austin neighborhood were highlighted in an article published by Austin Weekly News.

Michelle Scott and Dr. Sarah Jones, assistant professor of nutrition sciences, attended the Austin City Town Hall Market in October to raise awareness about healthy eating, which Scott promotes through her online food company Thank God 4 Raw Vegan Treats.

“We’re just trying to help our residents become more aware of the benefits of fruits and vegetables,” Scott, an Austin resident, said. “It may be simple for others, but not that simple for them. So, we’re trying to get them acclimated to more fruits and vegetables and get them off medication and reduce their pharmaceutical costs. That’s our goal.”

Scott is also the founder of the Community First Foundation, which advocates for policy changes to fix problems of food insecurity within Black, brown and minority communities.
